This was a custom cut for Maranatha Farms. These steaks are cut through the rear ham perpedicular to the bone. This yields a 1/2" ham steak the size of a dinner plate with a sample of each muscle group in the ham. Salt and pepper for two to four hours, rinse and dry, sear on an iron skillet then grill to finish cooking and WOW...perfection!
